Sažetak
The nutritional importance of fish consumption is associated largerly with the content of n-3 polyunsaturated fatty acids (n-3 PUFA). The two-banded seabream, Diplodus vulgaris, L. occupies an important place in the fishing activity of Croatia because it is appreciated in the mediterranean type of diet. The fish muscle tissue was analysed for the lipid and moisture contents. The fatty acid composition of neutral (triglycerides-TG) and polar (phosphatidylethanolamine-PE, phosphatidylcholine-PC, phosphatidylinositol/phosphatidylserine-PIPS) lipid classes was determined. Fish specimens were obtained from the Kvarner Bay, north of the Adriatic Sea. The total lipid content amounted to 1, 0 ± 0, 4 %. The moisture content was 77, 8 ± 2, 7 %. There have been identified 16 different fatty acids in the analysed fish muscle tissue samples. The major constituents of the total fatty acids were saturates: palmitic (C16:0) and stearic acid (C18:0) ; monoenes: oleic (C18:1 n-9) and palmitoleic acid (C16:1) ; polyunsaturated: arachidonic (C20:4 n-6), eicosapentaenoic (C20:5 n-3, EPA) and docosahexaenoic acid (C22:6 n-3, DHA). The fatty acid composition showed a more favourable profile in neutral lipid fractions, containing more mono-, di- and poly- unsaturates. The degree of unsaturation, expressed as unsaturation index, amounted from 0, 93 to 1, 18. The n-3/n-6 ratio, as a marker of biomedical importance for fish lipids was also calculated and amounted from 0, 95 to 1, 85. It can be concluded that D. Vulgaris, L. is a good source of natural n-3 PUFA, which are known for their many benefits in human health and diseases. It would therefore be suitable for the inclusion in highly unsaturated low-fat diets.
