Sažetak
Cereals and cereal based products are food with health protecting properties mostly due to dietary fibers and different antioxidants such as polyphenols and phytic acid. Since wheat flour based confectionery products, especially different kinds of hard biscuits, are often consumed by children and old people in particular, it is of interest to know if such products could be considered as a source of dietary fibers and phytic acid, recently identified as a compound with anticancerogenic and antioxidant potential therefore being important factor in prevention of colon cancer and cardiovascular diseases. To evaluate some wheat flour based biscuits on Croatian market with regard to their dietary fiber and phytic acid contents and thereby their functionality, neutral detergent fiber (NDF), acid detergent fiber (ADF) and phytic acid contents were determined in standard white wheat flour (type 500) biscuits and in dietetic biscuits enriched with whole wheat grain flour, whole wheat grits, cereal flakes and soya flour. Neutral-detergent fibber (NDF) content was determined by Van Soest and Wine method ; acid-detergent fiber (ADF) content by Van Soest method, and phytic acid by Haug and Lantzsch spectrophotometric method at 519 nm. The results show enriched biscuits were up to 10-fold higher in dietary fibber content and up to 500% richer in phytic acid in comparison with white wheat flour based biscuits. Data suggests whole grain flour based or enriched biscuits, respectively, are good source of dietary fibber since 100g of such biscuits can cover up to 50% of recommended daily intake of dietary fibres. As higher content of dietary fibber corresponds to higher phytic acid content, enriched biscuits could be considered as good additional source of those health protecting components and therefore as a functional food, too.
