Sažetak
Peka has been used as the main baking tool for baking bread on a hearth. It has been in existence in Croatia since ancient times. The word peka itself is the name of the special bell-shaped lid for covering bread dough during baking. The peka lid is covered over with hot embers and ashes to provide the heat necessary for baking. The know-how of baking bread under peka has been passed on from generation to generation by means of oral tradition. This chapter includes the description of a peka itself, the tradition of baking bread under a peka, and contemporary techniques of making peka bread, with a special emphasis on the features of the final product. Although breads labeled as peka can be found throughout various places in Croatia, an authentic bread with the unique shape, texture, and flavor can be only found in a few local specialty bakeries and restaurants.
