Sažetak
Brewer’s spent grain (BSG) is a by-product of the brewing industry. In this work, BSG was used as a substrate for the cultivation of Thermomyces lanuginosus under solid-state fermentation (SSF) conditions for 15 days. The expected outcome of the SSF was the simultaneous production of a crude enzyme extract comprised of xylanase and β- glucosidase and fermentation residue intended for further use in the production of sugar-rich extracts and/or animal feed. An analysis and evaluation of the safety suitability of BSG for animal feed was performed in the raw sample, fermentation residue and solid residue from sugar hydrolysate. The highest activities of enzymes were obtained on the 8th day of fermentation, for xylanase 65403.96 ± 4073.15 U/g dry weight and for β-glucosidase 117.82 ± 4.10 U/g dry weight. The concentration of total reducing sugars increased 1.83-fold during the 15-day SSF, while analysis of individual sugars showed an increase in sucrose and ribose concentrations. Minerals and lactic acid were released during SSF, as observed in the samples of fermentation residues and solid residue of sugar hydrolysate, which enriched this material as potential animal feed. Accordingly, the correctness analysis showed that undesirable substances such as mycotoxins, ergot alkaloids, tropane alkaloids, polychlorinated biphenyls and polycyclic aromatic hydrocarbons were within the permissible limits. This work has laid the foundation for the use of BSG to obtain high-value products such as enzymes, sugar-rich extracts, and mineral-enriched animal feed.
