Sažetak
The growing concern in last decade is to reduce the impact of industrial waste on the environment. The wine industry produces large amounts of waste, including grape marc, disposal of which can result in environmental pollution due to its high biochemical oxygen demand. Therefore, there is a need of suitable technologies for a smart exploitation of grape by-products as a convenient source of polyphenols for pharmaceutical, cosmetics and food applications. Grape polyphenols showed several healthy effects, as powerful antioxidant, antibacterial, anti-inflammatory and anticancer. Industrial extraction processes are commonly carried out with organic solvents with the all the risks related to volatile organic compounds (VOCs). From the ecological point of view, the replacement of VOCs with green solvents is an important goal. The unique properties of natural deep eutectic solvents (NADES) of non- flammability, biodegradability and non-volatility, have attracted great attention as environmentally friendly green alternative. The aim of this study was the development of a green extraction of polyphenols from grape marc using NADES by selecting the most effective mixture among choline chloride:malic acid, choline chloride:citric acid, choline chloride:urea, choline chloride:oxalic acid and choline chloride:glycerol, with 30% (w/w) of water. The highest extraction efficiency was achieved with choline chloride:citric acid (28, 43 mg gd.m.-1). The results of this study confirmed the great potential of NADES in the extraction of polyphenols from grape marc.
