Sažetak
Citrus fruits contain numerous naturally occurring compounds such us flavonoids, limonoids, furanocoumarins, vitamins, carotenoids, organic acids, and amines. Citrus fruits are classified as acidic fruits because their soluble solids consist mainly of organic acids and sugars, which are used as the main index of maturity and as one of the main analytical measures of flavour quality. Organic acids profiles were estimated in five cultivars (‘Zorica’, ‘Chahara’, ‘Kawano Wase’, ‘Owari’, and ‘Saigon’) of mandarins (Citrus reticulata Blanco) from Neretva Valley by HPLC- DAD. Citric acid was the dominant acid ranging from 8.53 to 13.18 g L‑1 followed by malic acid (ranging from 447.76 to 902.48 mg L‑1), ascorbic acid (ranging from 286.82 to 389.02 mg L‑1) and oxalic acid (from 47.04 to 98.03 mg L‑1). Phenethylamine alkaloids have attracted considerable interest in recent years because of their potential role in obesity prevention. Of all the phenethylamine alkaloids, only synephrine is detected in Satsuma mandarin juices. The highest content of synephrine was found in ‘Zorica’ (146.1 mg L‑1), followed by ‘Kawano Wase’ (121.9 mg L‑1), ‘Chahara’ (109.6 mg L‑1), ‘Owari’ (95.7 mg L‑1) and ‘Saigon’ (94.1 mg L‑1) from HPLC-DAD.
