Sažetak
Food processing and food consumption is the process that will never end. From 1st industrial revolution, there is increase in population and the demand for food. The is also constant improvement in the production processes and used technology. In time, where environment is greatly hurt, there is final call for population. Protect the environment! The demands are to reduce emission of harmful greenhouse gases, to optimise food production (from raw material) to final product (zero waste and low emission). Tools that we can use to tackle the problems, are in the concept of Industry 4.0. Tools are smart sensors, big data, blockchain, Internet of Things (IoT), Industrial internet of things (IIoT), artificial intelligence, traceability using Quick Response (QR) codes etc. Priority in food production is food safety, so it is important to drive sustainable technologies, in line with sustainable development goals (SDGs), issued by Agenda 2030, by United Nations. There are also sustainable development indicators (SDI) like key performance indicators (KPI) to follow sustainable development. The idea in to improve existing thermal process, or to reach technology readiness level (TRL) of nonthermal processing technologies, to be implemented in food industry. Advantages of nonthermal technologies are low temperature processing, low processing time, less energy production, low emission of greenhouse gases. The focus in also on waste, water and carbon footprint and waste management systems in lines with circular economy approach. In the end, we come to Society 5.0., where usage of data, obtained by Industry 4.0 (optimisation of production), is the most important. Society 5.0 is a new phase in human development in which technology is seamlessly integrated into our daily lives. Data are in core of the plan (rather than capital) and the benefits of technology are shared by all.
