Sažetak
Hormones are chemical substances naturally secreted in human and animal body, which regulate a wide range of physiological functions. In farm animals, exogenous therapeutic application of hormones may yield some health benefits, while in higher doses these substances have an anabolic effect resulting in increased protein synthesis and lipolysis. In the past, numerous cases of illegal animal treatment to obtain significant yields and higher profits in livestock production had been proven, pointing out that hormones are one of the most used, but also most controversial veterinary drugs. Given that these substances, when applied to farm animals, are carried over into body fluids and edible tissues, consumers may experience the effects of their hormonal action through daily consumption of different products of animal origin (e.g. milk, meat, offal). Since different toxic effects of both natural and synthetic hormonal substances and numerous cases of human intoxications have been evidenced, their use as an animal growth promoter in the European Union, as also in many other countries worldwide, is banned. Natural exogenous hormonal compounds follow the same pathways as those biosynthesized by the animal, making the detection and confirmation of exogenous administration very difficult. Identification of illegal application has to be based on well-grounded interpretation of the established natural hormone levels in materials sampled from farm animals in dependence on many factors of influence (gender, age, breed, etc.). However, no final legal solution has been found yet to control the abuse of natural hormones exogenously applied to farm animals, even though a number of promising analytical procedures have already been published. At the same time, in the last decades some new synthetic hormonal substances and their mixtures have constantly appeared on the black market, posing as an additional threat to consumers. Due to the established toxic effects, it is clear that the detection of hormonal substances in raw materials and final food products is of public health importance. Therefore, systematic monitoring at all critical points of food production from farm to consumer is necessary, as well as a continuous development of modern analytical methods in order to enable the recognition of hormone abuse as efficiently as possible.
