Sažetak
Olive pomace is a crude waste that lags after olive oil production in large amounts. Considering its high content of phenols that have proven positive effects on human health, it can be considered a high-value byproduct of agroindustry. In this study, we studied bioaccessibility of the main phenols in crude olive pomace extracts (OPE). Therefore, we recently optimized standardized in vitro methods for bioaccessibility determination of OPEs’ phenols in order to examine the effects of OPE’s matrix and food presence in the gastrointestinal tract. Our results show that OPE matrix and the presence of food in the digestive tract significantly affect OPE phenols bioaccessibility. Also, the usage of standardized methods for bioaccessibility determination enabled a more relevant comparison of the obtained results with other studies on olive phenols bioaccessibility what is of immense importance when comparing different sources of these valuable phenols as nutraceuticals. The results of the study highlight the possibilities of simple interventions during the formulation that could result in improved functionality of the final product.
