Sažetak
The innovative procedure of stress-deformation analysis represents the initial application in food industry to the investigation of the mechanical properties of the extruded products. The mechanical properties of food extrudates are narrowly tied with the quality of the product. Statistical analysis of the experimentally recorded data leads exactly to the best-consumed samples thus directly confirming the method. The future plans are connected to more realistic monitoring of food breaking down while chewing.
