Sažetak
This presentation reports original and timely research data involving the role of a diet enriched with n-3 PUFAs functional food on microvascular vasodilation, microvascular responsiveness range to a stress challenge and markers of oxidative stress in competitive athletes. This study provides functional evidence that the consumption of n-3 PUFAs enriched hen eggs significantly improves endothelium- dependent vasodilation of forearm skin microcirculation independently of blood pressure and serum lipids changes in competitive athletes. Moreover, functional vascular changes were accompanied by a significant decrease in antioxidant enzymes (GPx and SOD) serum activity, potentially due to improved oxidative stress balance, which diminishes the need for antioxidant defense. Consumption of n-3 PUFAs enriched hen eggs also modified forearm skin microvascular adaptation to the acute exercise stress challenge in competitive athletes.
