Sažetak
Biological treatment of grape pomace (GP) with T. versicolor was initially investigated in laboratory jars where the amount of GP was 50 g. Then the process was scaled-up in a tray bioreactor with 1150 g of the GP per plate. The aim was to analyze the content of phenolic compounds, the antioxidant activity of the extracts and the activities of laccase and manganese peroxidase. Ten phenolic acids were identified and quantified by UHPLC. The content of total phenols and flavonoids proved to be highest in the untreated sample (50.87 mg/gdb and 25.08 mg/gdb), as well as the antioxidant activity measured by DPPH, ABTS and FRAP methods (58.30 mgTROLOX/gdb, 314.28 mgTROLOX/gdb and 211.98 mgTROLOX/gdb). The biological treatment had a positive effect on four phenolic acids (p- hydroxybenzoic acid, vanillic acid, p-coumaric acid, 3, 4-dihydroxybenzoic acid), with an increase in concentration of 1.22-, 1.14-, 1.33-, 1.52-fold in laboratory jars and 2.12-, 1.16-, 1.33-, 3.06-fold in tray bioreactor. The maximum activity of laccase and manganese peroxidase was 2.66 U/gdb and 0.19 U/gdb in laboratory jars while it was 0.96 U/gdb and 0.32 U/gdb in tray bioreactor.
