Sažetak
The food industry is rapidly developing new nonthermal food processing techniques like high power ultrasound, nonthermal plasma, pulsed electric field, high hydrostatic pressure, electron beam, 3D printing in order to target high-quality products and sustainable processes. New non-thermal techniques are considered "green" extraction methods for isolation of bioactive compounds because conventionally used organic solvents for extraction can be replaced by water or other green solvents like D-limonene, dimethyl carbonate (DMC), ethanol, ethyl-acetate etc. Besides solvent selection, techniques for extraction should also target to assure sustainable processing and high-quality extracts.
