Sažetak
Within the context of typical food products characterisation, an approach based on headspace volatile compounds of olive oils obtained by different cultivars was developed. Solid-phase microextraction (SPME) was used because of its capacity to eliminate any trace of solvent extraction and of its characteristics of easy use, low costs and rapidity. Linearity and repeatability were checked for 7 standard compounds representing the common groups of virgin olive oil volatile compounds, within a concentration range of 0.1 - 1.0 mg/kg in refined olive oil. Results show that the method can be successfully applied to virgin olive oil analysis. The influence of harvest data, year of production, rootstock and pedoclimatic conditions on the characteristics of oils from three most important cultivars in Istria (Croatia) were studied by applying the developed method. Among the analysed volatile compounds, five of them proved useful to discriminate between oils obtained by studied cultivars, although the influence of year of production was highly significant.
