Sažetak
Introduction: The positive effect of n-3 polyunsaturated fatty acids (n-3 PUFAs) dietary supplementation is known in cardiovascular patients, however it is still unknown whether consuming functional n-3 PUFAs enriched foods can have the same effect. The goal of this ongoing study is to investigate the effect of n-3 PUFAs-enriched chicken eggs consumption on microvascular function and to determine the influence of consumption of these eggs on changes in biochemical parameters in blood. Methods: The subjects were cardiac patients with stable coronary artery disease (N = 8) who consumed 3 n-3 PUFAs enriched eggs daily for three weeks, and all measurements were made before and after eggs consumption. Measurements included postocclusive reactive hyperemia (PORH) assessed by Laser Doppler Flowmetry (LDF), Laser Doppler measurement of skin microvascular flow in response to acetylcholine (ACh) and sodium nitroprosside (SNP) ionophoresis. Blood samples were collected for lipid profile, fasting glucose level, high- sensitivity CRP, von Willebrand factor, and other biochemical parameters. Results: Preliminary results showed a statistically significant decrease in von Willebrand factor values after consumption of n-3 PUFAs -enriched eggs from 1.5 ± 0.7 to 1.2 ± 0.5. Other measured parameters showed no significant difference so far, however, it is a small number of subjects. Conclusion: This study is still ongoing, a small number of subjects have been analyzed (N = 8) and the presented results are preliminary. So far, the beneficial effect of omega-3 PUFA on the von Willebrand factor has been shown.
