Scaling up extraction process for grape pomace anthocyanins with natural deep eutectic solvents

Food processing generates a substantial volume of solid organic by-products. Only small amounts of these by-products are up-graded or recycled although they are still a rich source of antioxidants due to the high content of polyphenols. Bioactive components present in the agro-industrial waste can be recovered using various techniques, but nowadays, green and sustainable technologies have been dramatically expanding in popularity. Therefore, following green extraction principles bioactive compounds should be extracted using alternative solvents to organic solvents and innovative technologies. Over the past decade, among neoteric solvents, natural deep eutectic solvents (NADES) have become promising alternatives to traditional organic solvents from both environmental and technological perspectives and have been dramatically increasing in popularity. The properties that have gained them the environmentally friendly label are nonvolatility (reduced air pollution), nonflammability (process safety) and excellent stability (potential for recycling and reuse). The aim of this study was to develop eco- friendly extraction method for grape pomace anthocyanins. First, screening of 10 different NADES was performed and choline chloride-based NADES containing citric acid as a hydrogen bond donor was selected as the most promising one, according to price, physicochemical properties and environmental impact of solvent and anthocyanins stability. Then, optimization of the process parameters of the extraction was carried out considering the anthocyanins extraction yield. Furthermore, a method for recovery of anthocyanins from NADES was developed. According to results in laboratory scale, green extraction method for anthocyanins from grape pomace and recovery of anthocyanins was performed on a bigger scale.
