Antioxidant effects of bioactive compounds from the extracts of the berry skin of grapes on hypercholesterolemia in mice

The grape skin extract (GSE) is rich in polyphenols - a group of organic compounds that have antioxidant activity and thus reduce oxidative stress. Recycling represents an excellent ecological solution for treating vine organic waste since every year over a thousand tons of grape skin is segregated during vinification. In this paper, we studied the effect of protective bioactive compounds from the grape skin extract on oxidative stress induced by high fat diet in mice. Investigated biomarkers of oxidative stress in the liver and kidneys were: malondialdehyde (MDA), protein carbonyl (PC), superoxide dismutase (SOD), catalase (CAT) and reduced glutathione (GSH). The results show that the treatment with the grape skin extract (GSE) in a dose of 100 mg kg-1 body weight significantly (ANOVA, p<0.05) reduced the activity of the PC and MDA in the liver and kidneys of both mice, and increased concentrations of SOD, CAT and GSH compared to the control group which can be attributed to the bioactive compounds present in the GSE. By adding grape skin extract to food we could produce functional food with cardioprotective effect.
