Influence of selenium on heavy metals distribution in fallow deer (Dama dama L.) tissues
Concentrations of heavy metals and essential elements in the game is an important indicator of the quality of game meat. The aim of this study was to determine the concentration of heavy metals (Cd, Pb, Hg and As) and essential elements (Fe and Se) in deer tissues (muscle, kidney, liver, adipose tissue and spleen) which resides in the natural habitat, and then after anthropogenic activity by enrichment supplemental feed with the selenium, to determine the interaction of selenium with heavy metals in the tissues. The research was conducted on 40 fallow deer that were shot in the hunting season in open hunting area during the two years of research. Analysis of habitat included analyzes of soil, tree leaves, grasses and fodders. Supplemental nutrition with the addition of selenium (0.5 mg/kg) carried out for 60 days in the second year of research. Concentration of Pb ranged from 13.67 to 63.08 mg/kg in soil and from 4.43 to 29.45 mg/kg for As. Determined concentrations of heavy metals in all analyzed samples were within the permitted maximum concentration prescribed by the Regulations on pollution of soils (NN 39/2013). During the first year of the experiment there was increased concentrations of Pb in muscle (0.56 mg/kg in young and 0.37 mg/kg in adult) and Cd in kidney (0.41 in young and 3.82 mg/kg in adult). Concentration of Se in all tisues was low. After supplementary feeding with the addition of selenium, concentration of Pb was lower in all tissues (muscle = 0.07:0.44 mg/kg ; kidney = 0.15:0.27 mg/kg ; liver = 0.17:0.19 mg/kg ; fat = 0.17:0.69 mg/kg ; spleen = 0.06:2.14 mg/kg). As a result of supplemental feeding of fallow deer with the addition of selenium, GPx activity was significantly higher (p <0.05) in the second year of research (933.23:1375.36 U/L), which is achieved satisfactory antioxidant protection.
