The authors are presenting the experience of ethnographic research of the diet on the Croatian islands of Brač and Hvar, discussing it in the context of institutional protection and safeguarding as an intangible cultural heritage. When talking about diet as an intangible cultural heritage, it is always in a context that includes more aspects of life, one of which is the skill of preparing a certain dish or processing an ingredient. The field research was conducted with the aim of preparing the Croatian part of the multinational nomination for the inscription of the Mediterranean diet on the UNESCO’s Representative List of the Intangible Cultural Heritage of Humanity. The phenomenon encompasses the Mediterranean heritage in the diet of the inhabitants of the aforementioned islands, in the past and nowadays. Although the dietary concept is impossible to define, it is possible to single out some of its elements, which have been determined by the shared past and geographic position.
