Volatile profiles of Satureja montana L. honey

The aim of this study was to isolate and identify volatile and semivolatile constituents of Satureja montana L. honey matrix and headspace. Volatile profiles of unifloral honeys could greatly contribute to determination of their floral and geographical origin. Volatile organic compounds (VOCs) were extracted using headspace solid-phase microextraction (HS-SPME) and ultrasonic solvent extraction (USE). Obtained extracts were analysed by gas chromatography–mass spectrometry (GC-MS). HS-SPME was performed with different fibre coatings recommended for volatiles/semivolatiles: polydimethylsiloxane/divinylbenzene (PDMS/DVB) – fiber A and divinylbenzene/carboxen/ polydimethylsiloxane (DVB/CAR/PDMS) – fiber B. Identified major components belong to different classes of organic compounds including terpenes, norisoprenoides and benzene derivatives. Among the volatile compounds identified in the headspace (fiber A ; fiber B), hotrienol (76.4% ; 49.1%) and 4-methoxybenzaldehyde (4.4% ; 16.3%) were the most abundant. Another abundant compounds were cis- and trans-linalool oxides, acetic acid and 3, 7-dimethylocta-1, 5-diene-3, 7-diol. Benzaldehyde, phenylacetaldehyde and 2- phenylethanol were present in smaller percentages and are commonly present in the headspace of various honeys. Minor percentages of norisoprenoids, α-isophorone, 4-ketoisophorone and β-damascenone, were also identified. USE method was used to obtain exhaustive chromatographic profile of volatile/semivolatile fraction of the honey matrix. The major compounds identified in pentane:diethyl ether (1:2, v/v) extract were shikimate pathway derivatives methyl syringate (53.8%) and syringaldehyde (18.9%). Higher aliphatic hydrocarbons, alcohols and acids hexadecan-1-ol, hexadecanoic acid, (Z)-octadec-9- en-1-ol, (Z)-octadec-9-enoic acid, octadecan-1- ol, docosane and tricosane were also present in the extract, but in minor percentages. The very high percentage of methyl syringate along with syringaldehyde in the extract can differentiate Satureja montana L. from other unifloral Croatian honeys.
