Study of Amadori products obtained by glycation of an opioid pentapeptide and related smaller fragments: Stability, reactions and spectroscopic properties
The stability and the formation of degradation products of Amadori compounds related to biologically active peptides under different conditions was followed by reversed-phase HPLC, absorption and fluorescence spectroscopy. The main products formed from the decomposition of the Amadori products studied were isolated and characterized by NMR and MS spectrometries.
