Sažetak
In the present work, comparison between the results of electrical impedance measurements and chemical analysis was done on broilers. The research was carried out on the breast muscles and leg muscles backside of thigh bones on the live broilers and after slaughtering. The HP LCR 4284 Meter device was used to measure the impedance module by puncturing electrodes on the middle part of the breast and leg muscles, along muscle fibers. Water content, total fat, proteins and ashes were determined by chemical analysis. Regression analysis showed highly significant correlation between impedance module and phase angle and chemical determination of the water content and fat mass in breast and leg muscles of broilers.
