Identification of honey botanical origin by fluorescence spectroscopy
The aim of this study was to determine applicability of “in-solution” fluorescence spectroscopy in the identification of honey botanical origin. One hundred and thirty honey samples including acacia, chestnut, linden, sunflower, honeydew, sage and floral honeys were investigated for fluorescence properties. Three-dimensional fluorescence spectra recordings of 50 mM phosphate buffer pH 7.0 honey solutions revealed significant differences between honeys of different botanical origin. 3-D spectra contained from 2 to 5 well-defined fluorescence peaks, which depending on the botanical origin of honey differed in fluorescence intensity as well as in their position. Therefore honeys were additionally analysed by measurement of fluorescence intensities at selected peak wavelengths. Results showed significant differences in fluorescence intensities of selected peaks between honeys of different botanical origin. Obtained data indicates applicability of “in solution” fluorescence spectroscopy in identification of honey botanical origin by three-dimensional spectra recording, or by simple fluorescence intensity measurement at selected peak wavelengths.
