Atlantic bluefin tuna (Thunnus thynnus) aquaculture in the Mediterranean
The Atlantic bluefin tuna (Thunnus thynnus) fattening industry in the Mediterranean Sea started in early nineties, with the goal to obtain a fresh product reach in muscle fat content, a characteristic well appreciated for the sushi and sashimi markets in Japan. It is considered that over 90% of the farmed Atlantic bluefin tuna is designated for the Japanese sushi and sashimi market (Buentello et al., 2008). By adopting capture-based farming of bluefin tuna, the export of such product could be organized through out the whole year, not depending solely of a short fishing period from June to July, and consequently enabling a reasonable price by keeping the market unsaturated.
