Sažetak
A number of studies have indicated that virgin olive oil had not only high nutritive value but also had an important role in prevention and therapy of coronary and some other deseases. Olive oil has a high monounsaturated oleic acid content and is resistant to oxidative changes becouse of its fatty acid content and its antioxidant components. Recent studies have estabilished that monounsaturated fats had the same low-density lipoprotein (LDL) cholesterol lowering effect as polyunsaturated fats, but contrary to a polyunsaturated fatty acids, monounsaturated fatty acids did not lower high-density lipoprotein (HDL) cholesterol levels.
