Application of the safety system for the production of the original Istrian Croatian honeys-based product-mead
Healthy foods, among them honey and honey-based products are the most promising exports of countries outside the European Union in the region. Within the Republic of Croatia, honey-based products and honey itself fulfils the needs of the market, both in terms of quality and quantity and carry strategic importance for further development of rural entrepreneurship and exports. The EU market is the perfect medium for long-term placement of healthy, safe foods. The goal oft this paper is to show the establishment oft he HACCP system as a system which ensures health safety of a product ; in this case, of the original Istrian honey-based product-mead, through hazard analysis, control measures for steps within the process, through detection of critical points and through the overview, i.e. implementation of the HACCP plan.
