European Food Hygiene and Veterinary Public Health curriculum
Food hygiene within the Veterinary Public Health is a very dynamic area of veterinary science and profession. Veterinarians are the only profession able to realize, analyze and connect all the factors from agri-food chain which can affect the food safety. Risk-based approach in food production and control should include all veterinary knowledge at pre-harvest and post-harvest level. Changes in European food legislation during the last decade strongly influenced the veterinary profession, moving from traditional end-product control toward the longitudinally integrated safety assurance. Therefore, veterinary university training programs in the area of Food Hygiene/Veterinary Public Health must be up-to-date and “produce” veterinarians with integrated risk-based knowledge. The need for harmonization of the European Food Hygiene/Veterinary Public Health Curriculum was recognized by European Association of Establishments for Veterinary Education (EAEVE) working group. Their general recommendations are presented in this lecture.
