Effect of interaction vine-environment on the development of the aromatic compounds, in Rose muscat from Istria, Croatia
The devlopment of aromatic compounds in grape must involve the enviromental conditions and the cultivar properties. Our investigations concerned a native cultivar, Rose Muscat (red), with emphasis to the development and kinetics of polyphenols and terpens. The salvage of native precious is fundamental to cope the genetics losses and make the most of the peculiar characteristics of varietes tightly bond to the local enviroment and culture. This can be achieved by a deep investigation of the plant behaviour and qualitative potential, especially in Croatian Istria, a region of a well-renowned viticultural and oenological tradition.
