Sažetak
Voltammetry of microcrystals, or abrasive stripping voltammetry is an electrochemical technique in which microparticles of water-insoluble substances are mechanically transferred onto a surface of working electrode and immersed into an aqueous electrolyte [1]. In the present communication, the application of this technique in the measurement of voltammetric potentials of powders of myricetin and dihydromyricetin are reported. Both compounds are flavonoids that are found in many grapes, fruits and vegetables in the form of glycosides. The first electrode reaction of both compounds is reversible, two-electrons, two-protons oxidation of pyrogallol group with E7 = 0.300 V vs. NHE. This makes them as potent antioxidants as quercetin. The second and the third electrode reactions are irreversible, one-electron, one-proton oxidations of hydroxyl groups. The responses of immobilized microparticles are similar to the characteristics of dissolved compounds. These results demonstrate that the applied technique is useful for the measurement of solid state reactivity of antioxidants. 1. Š. Komorsky-Lovrić, I. Novak, J. Food Sci. 76 (2011) C 916.
