Characterization of edible bilayer films from whey protein and chitosan
Multifunctional packaging systems have a great potential for commercial food packaging applications. An alternative strategy to improve edible films and coatings properties could be the blending process. In the present work, the main objective was to develop either layered or blended whey protein/chitosan films.
