Polyphenols and anthocyanins in sour cherry fruits depend on cultivar and harvest year
Total polyphenols and anthocyanins of 21 sour cherry genotypes harvested over three consecutive but climate different years in Eastern Slavonia were examined. The aim of this study was to determine how year and genotype influence polyphenols and anthocyanins content in sour cherry fruits. Phenolics of sour cherry fruits were extracted from freezed ground samples using acidified methanol in ultrasound bath. The content of polyphenols was determined spectrophotometrically by Folin-Ciocalteau method and total anthocyanins were estimated by pH-differential method. Analysis of variance showed that genotype significantly influenced polyphenols and anthocyanins content. The polyphenol mean values of genotypes in 3 years ranged from 521.01 in genotype Cigančica to 1008.00 mg of gallic acid/100 g fesh weight in genotype Heimans. Also, content of total anthocyanins expressed as 3-year mean value ranged from 231.14 in genotype Kelleris 14 to 460.85 mg of cyanidin-3-glucoside/100g of fresh weight of anthocyanins in genotype ST (cv. Maraska). Analysis of variance showed that fruits of different sour cherry genotypes varied in total polyphenols and anthocyanins over three experimental years. The smallest amount of polyphenols was found in year 2009 with 546.13 mg of gallic acid/100 g of fresh weight while year 2011 was the best year with 743.79 mg of gallic acid/100g fresh weight of polyphenols expressed as a mean value of all investigated genotypes. As well, anthocyanins varied from 330.38 to 443.87 mg of cyanidin-3-glucoside/100g of fresh weight in years 2011 and 2010, respectively. Investigated sour cherry genotypes differed in polyphenols and anthocyanins and year significantly influenced phenolics content. Results showed that over investigated genotypes cvs. Maraska, Rexelle and Heimans sorted out as a best source of phenolic compounds.
