Sažetak
The research regarding the amount of nutrients (water, proteins, fats and minerals) together with the composition of fatty acids (FA - SFA, MUFA, PUFA) in carp meat was carried out in the different breeding systems (extensive, semi- intensive and intensive). During each seasonal period 10 carp fisf , weighing from 1, 5 - 2 kg were caught from ponds of Dobna Vule (Czech Republic), Grudnjak (Orahovica, Croatia) and Grabovo (Vukovar, Croatia) and their nutrient and Fa amount were determined. The amount of water in the carp varied ranged from 72, 07% in extensive to 70, 13% in intensive breeding system and did not differ statistically. Diferences were found in the amount of fat content determined in different breeding systems (P<0, 05), which varied from 9, 24% in extensive to 11, 21% in intensive breeding system. The amount of SFA in carp muscle fat was significantly higher in extensive breeding (29, 97%) compared to semi-intensive (27, 69%) and intensive (20, 69%) breeding system (29, 97%). The most representative SFA - palmitic acid - ranged from 14, 55% to 21, 06%. Significantly higher values of MUFA were found in semi-intensive (62, 25%), compared to other breeding systems. The content of most representative MUFA - oleic acid - was 48, 84% in semi-intensive and 37, 91% in intensive breeding. Significantly higher values of omega- 6 PUFA were found in extensive breeding system. Ratio of omega-6 : omega-3 PUFA was significantly higher and unfavorable in the intensive, and favorable in extensive breeding system.
