Some phenolic acid and flavanols in several autochthonous Croatian wines determined by high-performance liquid chromatography (HPLC)

As a contribution to our investigation the phenolic composition of white wines Pošip and Rukatac and red wine Plavac mali was determined. These are the autochtonous and the most important Croatian cultivars in the viticulture region of Dalmatia. Content and relative ratio of individual polyphenols in wine is determined by cultivar, but ecology and vintage have influence as well. Due to these properties polyphenolic compounds are helpful for identification of wine. There is wide array of chemical and instrumental methods for determination of polyphenols, HPLC being one of the most useful. The method of solid phase extraction (C18 and SAX) was applied prior the HPLC analysis. Wines have been analysed using reverse phase liquid chromatography, UV-detection (280 nm) and external standard method. The structure of polyphenolic compounds in red wine was confirmed by UV-spectra (UV-DAD). Gallic, protocatechuic, vanillic, caffeic, p-coumaric, ferulic acid have been determined in white wine. Vanillic, caffeic, syringic, p-coumaric, ferulic, gallic acid and catechin and epicatechin(flavan-3-ol) have been determined in red wine Plavac mali. Determination of polyphenols in wine Pošip, Rukatac and Plavac mali is a beginning of more detail analysis of autohtonic Croatian cultivars. Such analyses can help to improve the wine quality and control of wine market.
