Determination of iron, zinc and manganese in dietetic products by atomic absorption spectrometry and plasma atomic emission spectroscopy
Since the trace elements have a singificant role in human metabolism and are the minor components of foods products its determination has elready received considerable attention and plays an important role in minrals analysis. The purpose of this study is to determine iron, zinc and manganese concentration in dietetic products and to compare the mean value of parallel determination and precision of the atomic absorption spectrometry (AAS) and inductively coupled plasma atomic emission spectroscopy (ICP-AES) methods. Fe, Zn and Mn content are determined in different kind of hard biscuits hased on classic wheat flour biscuits and biscuits enriched with wheat whole flour or wholemeal and soya flour. Results obtained by the both methods are in good agreement, statistically there is no significant difference between the methods and relative standard deviation depending on the investigated elements, sample and method ranged from 0.02 percent to 7.02 percent. However, ICP-AES as a well established analytical technique with large linear dynamics range, low detection limits, high precision and rapid multi - element analysis can be purposed for the determination of Fe, Zn and Mn in cereal products.
