Indole glucosinolates from white cabbage and cauliflower and their bioactive breakdown products

The cruciferous vegetables are natural source of thioglucosides glucosinolates, precursors of some biologically active compounds. Intact glucosinolates themselves exhibit low bioactivities, but the protection from carcinogenesis and tumor progression appears to be related to a series of degradation products, volatile and nonvolatile, which can be obtained by enzymatic, chemical or thermal cleavage of glucosinolates. The aim of this work was to examine the composition and biological activity of white cabbage and cauliflower autolysis and hydrolysis extracts by microbiological assays with some syelected strains of bacteria, moulds and yeasts. The samples werw analyzed by high performance liquid chromatography (HPLC) and gas chromatography with mass spectrometry (GC/MS). The results obtained confirmed the predominant content of glucosinolates degradation products indole-3-acetonitrile and 3, 3'-diindolylmethane in all the samples analyzed, as well as high levels of volatile isothiocyanates and degradation products of S-methyl-L-cystein sulphoxide. The assays with yeasts and moulds did not prove any growth inhibition activity of the autolysis and hydrolysis extracts, while all the samples inhibited the growth of the selected bacterial strains under investigated conditions.
