Consumer attitudes toward sensory and health aspects of artificial and natural sweeteners
Objective of this work was to find out what is consumers attitude toward sensory and health aspect of artificial and natural sweetners. The research aimed at discovering possibilities of replacing sugar in non-alcoholic beverages with sweetner, from consumer point of view. For this purpose multi-sensory aproach was used to examine quantitative and qualitative aspects of sweetners perception. Results show that consumers have great preference toward sugar, but are more willing to replace it with natural sweetner if sensory properties are adequate.
