Probiotic properties of Bifidobacterium animalis subsp. lactis BB-12 in baby cereal flakes enriched with inulin

Production of functional food supplemented with probiotic bifidobacteria is increasing because of their beneficial effects on human health. In this work novel probiotic product was prepared: baby cereal flakes enriched with inulin and lyophilized probiotic culture Bifidobacterium animalis subsp. lactis BB-12. The influence of this food matrix on probiotic properties of B. animalis subsp. lactis BB-12 was examined. The tolerance to simulated gastric and small intestinal juice was much higher when probiotic culture B. animalis subsp. lactis BB-12 was added together with cereal flakes and inulin, then for pure lyophilized probiotic culture. Bile salts resistance and bile salts hydrolase (BSH) activity of B. animalis subsp. lactis BB-12 has also been monitored by in vitro experiments. Furthermore, the influence of cereal flakes and inulin on the functional probiotic properties of B. animalis subsp. lactis BB-12 was examined by in vivo experiments on Swiss albino mice. Better adhesion ability of B. animalis subsp. lactis BB-12 and decrease of enterobacteria and sulphite-reducing clostridia in the large intestine of mice, were observed after feeding of mice with new probiotic product compared to adhesion and antibacterial activity of probiotic culture alone. The induction of serum IgA, IgG and IgM antibodies production in Swiss albino mice by B. animalis subsp. lactis BB-12 was not influenced by cereal and inulin addition.
