Analysis of polyphenols with potential antioxidant properties in wines from Croatia
Considering wines contain a wide range of polyphenols which have healthprotecting properties, especially, antioxidative effect, aim of this study was to assess the their content on selected wine from Croatia. For this purpose thinlayer chromatographic (TLC) method was developed. Best mobile phase for separation of polyphenols on silica gel TLC plates was selected using numerical methods. Additionally, total polyphenolic contents of wines were determined by Folin-Ciocalteu method. Results of analyses showed that the wine from Mediterranean part of Croatia have a highest polyphenols content. Results of quantitative structure-property relationship (QSPR) and quantitative structure-activity relationship (QSAR) of polyphenols show that their antioxidant activity largely depends on the number and position of hydroxyl groups in the molecule, as well as lipophilicity, size and shape of molecule
