Histometabolic properties of some muscles in "Hrvatica" hens

Pectoral muscle (sternobrachial part) and cranial iliotibial muscle of the 20 specimens of the original Croatian breed of hans named « ; Hrvatica» ; were investigated. Hens were one year old, between 2, 5 – 3 kg weight, and were growned in farm cages. Histomorphologycal characteristics of the muscle fibers were described by hematoxylin and eosin method. Histometabolic characteristics were determinated by demonstrating activities of lactate dehydrogenase (LDH), succinate dehydrogenase (SDH) and miosins adenosinetriphosphatase (ATP) enzymes. Regular arrangement and equal diameter of the muscle fibers were observed on transversal section of the samples. In cranial part of deep layer of the muscle we observed dark red muscle bundle which was one cm wide. Our earlier investigations of that muscle in comercial breeds of hens and turkeys were not showed similar finding. At the same part of pectoral muscle oxidative slow contractile muscle fibers were observed. Together with oxidative fibers, glycolytic fibers were present. These fibers were similar to the glycilytic fibers of other parts of the pectoral muscle. Macroscopicaly, iliotibial muscle was clearly divided in two parts with different colouration, light red coloured craniolateral part of the muscle, and much darker caudomedial part. Caudomedial part of the iliotibial muscle was showed large number of oxidative and oxidative-glycolytis fibers, and less number of glycolytic fibers. In the craniolateral part of iliotibial muscle glycolytic fibers were dominant and its number was increased progressively.
