Comparison of the Croatian and Macedonian Honeydew honey

The aim of this research was to compare physicochemical characteristics of honeydew honeys originating from Croatia and Macedonia. 11 samples of Macedonian and 17 samples of Croatian honeydew honeys were collected during the harvest seasons 2005 and 2006. All collected samples were subjected to the melissopalynological analysis, and afterwards water content, electrical conductivity, pH value, free, lactonic and total acidity, specific rotation, prolin and hydroxymethylfurfural (HMF) content, diastase and invertase activity were determined, as well as content of sugars glucose (G), fructose (F), sucrose, xylose, maltose, melesitose and raffinose. After exclusion of samples with HMF content higher than 10mg/kg, as differentiating parameters, among remained samples, were identified prolin content, free and total acidity, specific rotation and electrical conductivity, as well as glucose, sucrose, maltose and raffinose content. In comparison with Croatian honeydew honey, Macedonian samples have higher electrical conductivity and acidity, higher prolin content and higher enzymatic activity. Also, Macedonian samples have uncommonly high F+G content.
