Investigation of quality of hare meat (Lepus europeus Pallas)
The paper presents results of investigation of yield, chemical composition and energy value of hare meat in two hare populations (n=71) in two counties of East Croatia during two seasons (winter and spring). The average weight of killed hares was 4011 g, and the weight of dressed hares 2669 g, with meat yield amounting to 66.54%. The recorded, average values of chemical composition of the hare meat were as follows: water 75.34%, proteins 23.19%, fat 1.12%, ash 1.16%, calcium 0.014% and phosphorus 0.24%. The average energy value of meat was 438.51 kJ/100 g.
