Implementation of HACCP system in production of game birds
The aim of the research presented here was to improve feathered game farming as well as sanitary value of game meat, through the implementation of HACCP system. Through the implementation of HACCP system we have presented a concept of risk analysis at all critical control points (CCP), with the goal to identify, estimate and control possible problems of each production phase. According to the results of conducted risk analysis, the emphasis should be placed at the results of laboratory analysis aimed at detection of different Salmonella species, as they present the most probable source for product contamination as well as to endanger the human health. Furthermore, the conduction of all prescribed prophylactic measures (namely the vaccination against Newcastle disease or control of imunity after twentyone days later) and implementation of standard sanitation protocol (SSOP) enables the additional control of both, objects and animals. Therefore, it is in my opinion that I have successfully fulfilled all assigned analysis and achieved the results, which points at place and means of different risks in feathered game farming.
