Potential positive influence of some foods on the reducing ability/antioxidant power (FRAP) of human blood plasma
Epidemiological evidence link high intake of antioxidant micronutrients to health promotion. In this research work, the total antioxidant capacity of fresh fruit juices, vegetable extracts, wines and tea-like beverages (infusions) was measured as the ferric reducing ability/antioxidant power (FRAP), and compared with average FRAP of human blood plasma (1000 μ mol/L). The antioxidant power of controlled plant material (juices, extracts, infusions) was good. The best results were obtained for mulberry and blackberry juices (24380 and 42314 μ mol/L of juice). It can be expected that diet rich in fresh fruit or vegetables in combination with some medicinal plant infusions, could have postive influence on the antioxidant capacity of blood plasma.
