Intrinsic Antiradical Activity of Flavonoids
Flavonoids, compounds found in fruits, vegetables, and certain beverages, are a class of potent natural antioxidant, antiradical and metal scavenging agents. Their activity is well documented by numerous empirical and qualitative methods but has shown to be rather difficult to define quantitatively and predict theoretically, the reason being that these activities are exhibited in environments where all influencing factors are not easy to control. An objective method which will involve as few as possible of such influencing factors is therefore needed. We investigate a method which may yield the intrinsic activity (AR) of flavonoids (FlH) from their gas phase reaction with monocations of a metal M (M+) as ratio of the reaction products concentrations AR = F+ / MFlH+ , in measurement of the intensities of the corresponding positive ions in the LDI-FTICR mass spectrum generated by the reaction between the laser generated M+ and gas phase flavonoid after some delay time. The results are compared with other methods and discussed.
