Oil and protein in germ and protein in endosperm of the flint, semiflint and dent type of corn kernel
The objects of this investigation are to find the participation endosperm and germ in corn kernel and composition of endosperm, and the level of protein in horny and floury endosperm and both protein and oil in germ of the recent corn genotypes used in Croatia. This study was performed on 36 corn genotypes ; 20 origins from Bc Institute Zagreb, 11 from Agriculture Institute Osijek and 5 home cultivars produced in period from 2001-2003. Corn kernels were classified as flint, semiflint and dent, according to their product declaration, kernel characteristics and ratio of horny to floury endosperm. Flint, semiflint and dent kernel contained similar (P>0, 01) levels of germ (10, 29-11, 46%) and total endosperm (72, 49-73, 42%) and different (P<0, 05) levels of horny (64, 60-76, 40%) and floury (23, 60-35, 40%) endosperm. The flint type of corn contains the significantly (P<0, 005) highest level of protein in kernel (12, 09 vs. 8, 82 and 8, 20%), germ and endosperm components. The oil concentration in germ is not different among corn endosperm types.
