Sterol content and compositon of some non-refined and refined oils
The sterol content and composition of crude and refined sunflower, soybean and rapeseed oils, as well as of virgin olive oil, olive pomace oil and pumpkin seed oil (from common and naked seed) have been investigated. The sterol contents of investigated oils varied in composition as well as in total and individual amount. All samples of oil, except pumpkin seed oil contained predominantly Δ 5-sterols, and the main sterol was β -sitosterol with 50-80 % of total sterols. The major sterols in pumpkin seed oil were Δ 7-sterols (spinasterol, stigmastadienol and stigastatrienol), with very low amounts of β -sitosterol. The content of total sterols ranges from about 1700 mg/kg in virgin olive oil to 6900 mg/kg in crude rapeseed oil. The composition of sterols in sunflower, soybean and rapeseed oils, before and after refining was more or less the same, while the total content during refining process decreased 5-30%.
