Relationship between the tryptophan and nicotinic acid in hydrothermic treated cereal products

The aim of this study was to determine the relationship between preformed niacin content and niacin content from its potential amino acid precursor, during industrial production of wheat, tye, barley and oat flakes under same, strictly defined techological conditions. The results of investigation reveal that, as distinquished from tryptophan, there were no significant differences in nicotinic acid content during the industrial production of cereals flake. However, the obtained results show that nicotinic acid content converted from tryptophan in relation to the performed nicotinic acid content decreased in all investigation cereals flake with the exception of wheat flakes.
