Determination of the phenolic content of Croatian wines using cyclic voltammetry
The French paradox has become widely excepted term used extensively in describing the positive effects of wine consumption in prevention of hart disease. The compounds most responsible for the cardiovascular protective properties of wine are polyphenols that act as antioxidants by preventing the oxidation of low density lipoprotein (LDL)- the initial step in the fatal cascade of events resulting with a hart attack. In the past year, the studies of wine antioxidants have been focused on an electrochemical method based on the monitoring of the potential vs. current response on the electrode immersed in a solution of diluted wine. Cyclic voltammetry measurements are quick, inexpensive, and allow the determination of the reducing strength of individual wine antioxidants (the more powerful reducing agent will have a less positive oxidation potential). We applied cyclic voltammetry at an inert glassy carbon electrode in the study of polyphenolic content of Croatian red and white wines and compared the results with those obtained using the conventional spectrophotometric Folin-Ciocalteau method.
