Chemical properties of goat milk
Istraživan je kemijski sastav kozjeg mlijeka na 912 pojedinačnih uzoraka mlijeka koza alpina i sanske pasmine. Prosječna količina masti u pretraženim uzorcima iznosila je 3.46% (2.23-6.07%), bjelančevina 2.66% (1.87-4.63%), laktoze 4.80% (3.43-5.55%), bezmasne suhe tvari 8.24% (7.04-10.02%), a količina suhe tvari prosječno 11.70% (9.27-16.90%), odnosno količina vode 88.30% (83.10-90.73%). Unutar 7 laktacija najviše je kolebala količina masti a najmanje količina bjelančevina odnosno laktoze. ------------------------------------------------------------------------------------------The chemical composition of goat milk was investigated. The studies were performed on 912 individual milk samples collected from goats of alpine and saanen breed. The average quantity of fat in examined samples was 3.46% (2.23-6.07%), proteins 2.66% (1.87-4.63%), lactose 4.80% (3.43-5.55%), non-fat dry matter 8.24% (7.04-10.02%), respectively, and the content of dry matter was on an average 11.70% (9.27-16.90%), 88.30% (83.10-90.73%) of water, respectively. During 7 lactation periods, the greatest variations were recorded in fat content and minimum in protein and lactose content.
