The development of the aromatic compounds in antive Muscats from Istria, Croatia
The development of aromatic sompounds in grape must are dependent on the enviromental conditions and the cultivar properties. Our investigations concerned two native cultivars, Rose Muscat (red) and Momian Muscat (white), with emphasis to the development and kinetics of polyphenols and monoterpenes.
